Introduction

I tweaked a recipe found on the internet to try to create an even lower carb/fat cheesecake. I use Truvia for my sweetener since it is calorie free with no aftertaste. Ingredients

    3 Packages reduced fat cream cheese or Neufchatel cheese (ROOM TEMPERATURE)
    2 whole eggs
    4 egg whites
    1 1/2 teaspoons vanilla extract
    1 1/2 teaspoons lemon juice
    1. and 1/3 cups sugar equivalent of art. sweetener (I used Truvia)
    1/4 cup reduced fat sour cream

    Crust:
    1 cup almond flour
    2 tablespoons sugar eqivalent art sweetener

Directions

Preheat oven to 375
Combine ingredients for crust, and press into the bottom of a spring form pan. Bake for 8-10 minutes, until fragrent and beginning to brown. Remove from oven.

Reduce heat to 350 let pan cool a bit then wrap springform pan with aluminum foil on bottom and sides

Put cream cheese in mixing bowl, beat until fluffy. Add other ingredients one at a time being sure to scrape the bowl after each. When all ingredients are combined scrape one more time, beat one more time and pour into pan over crust.

Place Springform pan with aluminum foil already affixed into larger pan. Add boiling water to larger pan surrounding cheesecake pan. (This is called a waterbath and will help to ensure cake is moist and cooks evenly)

Bake in 350 over for 60-90 minutes checking often. Cake is done when firm to the touch but slightly soft int he center.

Let cool add your favorite fresh fruit and enjoy
