Number of Servings: 32

Ingredients

    1 cup Butter
    1/2 cup Sugar
    1 ts Vanilla
    2 cups Flour
    3/4 ts Salt
    1 1/4 cups Flaked Coconut (I use Bob's Red Mill unsweetened)
    1 ts Orange Zest (if desired)
    1 package Cadbury Mini Chocolate Eggs (Or M&Ms)

Directions

Preheat Oven to 300

Spread coconut on ungreased cookie sheet. Toast for 10-25 minutes, until golden brown. Start checking after 10 minutes, then stir occasionally til done.

Increase oven heat to 350.

Cream butter and sugar together. Add vanilla and egg, blend. Mix flour and salt together in separate bowl. Add gradually to butter mixture.

Put coconut in clean mixing bowl. Measure out tablespoons of dough, forming into balls, rolling in coconut. Use thumb to make impression in center of dough, then place on cookie sheet. Place cookies about 1 1/2 inches apart. Bake for 8-10 minutes, until slightly golden.

After cooled, add 2-3 candy eggs to each nest.
