Ingredients



    * Carrots, raw, 2 carrot (7-1/2")
    * *Flour, white, 1 cup
    * Oat Bran, 1 cup
    * Granulated Sugar, 1 cup
    * Baking Powder, 2 tsp
    * Baking Soda, 1 tsp
    * Zucchini, 2 cup, sliced
    * Cranberries, dried, sweetened (craisins), 1 cup
    * Apples, fresh, 2 medium (2-3/4" dia)
    * Buttermilk, lowfat, 1 cup
    * Egg, fresh, 3 medium
    * *Canola Oil, .5 cup
    * Vanilla Extract, 1 tsp

Directions

Preheat oven to 350 degrees and grease muffin cups or use muffin tin liners.
Mix the flours, oats, sugar, baking soda, baking powder, cinnamon, and salt.
Stir in oil, eggs buttermilk, and vanilla.
Stir in the carrot, zucchini, almonds, raisins, coconut, and apples.
Spoon the batter into greased or lined cups.
Sprinkle with sugar.
Bake for 12 to 18 minutes or until springy to the touch.
Let muffins cool in tins and turn them onto a wire rack.
