Ingredients

1 Cucumber - diced
1 red pepper - diced
3 celery stalks - diced
1/2 cup red onion - diced
1 cup cherry tomatoes - halved (or diced tomato)
1/4 cup chopped black olives
4 oz feta cheese
juice from 1/2 lemon
2 Tbl olive oil
1/4 cup chopped fresh parsley
salt and pepper to taste
Directions
Combine all ingredients in a bowl and toss. Makes 6 servings
