Ingredients

1.5 pounds boneless skinless chicken breast, cut into bite sized chunks
1/4 c butter
1/2 hot pepper sauce
1.5 c bread crumbs
1 c lowfat buttermilk
Directions
1. Preheat the oven to 400 F
2. Place the bread crumbs in a large freezer bag. Pour the buttermilk into a shallow dish. Place two wire racks near the work station.
3. Working in batches, place the chicken chunks in the buttermilk and then into the freezer bag. Close the bag and toss to coat. Remove the nuggets and place on wire racks. Let rest 10 minutes.
4. Spray a cookie sheet with nonstick spray. Arrange nuggets in a single layer and bake 20-25 minutes.
5. While the nuggets cook, melt the butter in a small saucepan over low heat. Stir in the hot sauce and keep warm.
6. When the nuggets are done, toss them in the sauce, right on the cookie sheet. Place sheet back in oven for 5 minutes.
