Ingredients

    3 oranges
    2 Lebanes cucumbers, trimmed
    1 bunch rocket, trimmed
    1 Tbsp sesame oil
    Salt & pepper to taste
    800g salmon fillet
    3 spring onions, thinly sliced diagonally
    2 garlic cloves, finely shredded
    3cm fresh ginger, peeled, finely shredded
    3 tsp soy sauce

Directions

Remove skin and white pith from oranges. Cut oranges into segments over a bowl to catch juice. Strain the juice into a jug and place segments in a bowl. Run a vegetable peeler down length of cucumber to form ribbons. Add to orange segments with rocket and toss to combine. Add 2 tsp sesame oil, salt and pepper to reserved orange juice. Whisk until combined. Add dressing to salad just before serving.

Line a large steamer basket with baking apper. Arrange salmon onto baking paper. Combine spring onion, garlic, ginger, remaining sesame oil and soy sacue in a small bowl. Spoon mixture over salmon. Cover steamer basket with a lid and place over a saucepan of simmering water. Steam for 5-8 minutes for medium rare or until cooked to you liking. Serve salmon with salad.
