Introduction

These are good for a grab and go breakfast as wll as a snack. These are good for a grab and go breakfast as wll as a snack.
Number of Servings: 24

Ingredients

    56g (1/2 cup) dry roasted salted peanuts
    56g (1/2 cup) dry roasted salted cashews
    2 cups raisins
    2 cups quick oats
    88g. (2 cups) kashi heart to heart warm cinnamon oat cereal
    1/2 cup peanut butter
    150g (1/2 cup) honey
    70g (1/2 cup) sucanat or brown sugar
    1 tsp. vanilla

Directions

Coat a 9"x13" baking pan with cooking spray. In a large bowl, combine peanuts, cashews, raisins, oats, cereal and wheat germ. In a large glass bowl, combine peanut butter, honey and sucanat. Microwave on high for 2-3 minutes, or until thick and bubbly, stirring every minute. Add dry ingredients to the syrup and mix well. Transfer the mixture to the prepared pan. Press down firmly. (It helps to coat your fingers with cooking spray.) Let stand at room temperature for about 1 hour to harden. Cut into 24 bars.

    Have been thinking Dear Husband needs an energy bar with his 10am coffee break - 67 and getting too tired..tried this one and it is "pretty good"..he wants some chocolate in it!!! - 6/5/11

    I left out the raisins, used the Heart to Heart Honey Kashi cereal instead of the Warm Cinnamon, and sprinkled some mini chocolate chips on top. Also used reduced fat Jif. Turned out awesome! - 2/28/10
