This is a raw vegan recipe using a dehydrator. This is a raw vegan recipe using a dehydrator.
Number of Servings: 24


    Eggplant, fresh, 1 eggplant, peeled
    Salt, 0.5 tbsp
    *365 Organic Raw Agave Nectar, 1.5 tbsp
    *Amoy reduced salt Soy Sauce, 2 tsp
    *Bragg Raw-Unfiltered Organic Apple Cider Vinegar, 2 tbsp
    *Chili Powder, 1 tsp


Peel the eggplant and slice using a mandoline slicer or slice the entire eggplant into very thin strips (resembling the size and shape of a bacon slice.

Mix the remaining ingredients and then marinade the eggplant for 30 minutes.

Lay out the strips of eggplant onto dehydrator trays and dehydrate at 105 degrees for approximately 12 hours.

  • I could not find a single egg plant in 3 differenent stores, so I used zucchini, it smells amazing and I can't wait. It is taking a lot longer than 12 hours. I believe because the zucchini is a wetter veggie. Love this recipe I even liked it raw :) - 3/27/11

  • Yum! I still have it in the dehydrator, but I've been testing it along the way. Tastes yummy! I did add a few more spices and topped it with some freshing ground pepper once it was on the trays. This will be a staple! - 6/9/10
