Ingredients

    2 Tbsp olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    2.5 cups cooked white rice
    8 cups low-sodium, fat-free chicken or vegetable broth
    14 oz. canned, diced tomatoes with green chiles (ie. Rotel)
    1/3 cup lime juice
    14 oz. canned black beans, drained & rinsed
    12.5 oz canned chicken breast - if you prefer to use regular chicken breast (ie. not canned), substitute 2 cups of cooked, shredded chicken
    4 oz. canned yellow sweet corn kernels

Directions

Start cooking the rice first. You will need about 2 - 2.5 cups of cooked rice.
In a large stock pot or soup pot, heat the olive oil over medium-high heat.
Add garlic and onion, saute until onion is slightly tender and translucent.
Add broth, tomatoes with green chiles, and lime juice. Bring to a boil.
Add the black beans, corn, rice and chicken. Reduce heat and simmer for about 5 minutes.

If desired, you can top your soup with any of the following tasty additions: chopped cilantro, shredded cheddar cheese, diced avocado or blue corn tortilla chips. None of these toppings are included in the calorie breakdown for the soup.

Makes 14 servings (one cup each).

    All I had was Italian stewed tomatoes, so I added that instead and also 1/3 cup of salsa verde and 1 tbsp of chili powder... was delish! - 2/19/11

    I made this with a few slight varitions and it was great, the kids even loved it. Opt'ed for no rice , only used Low Sodium Chicken Broth, Chicken breast strips, 2 cans rotel ( removed some tom's) 2 cans black beans, and sweet corn. Was great !! Can't wait to make again. - 8/11/07

    I used brown rice, which gives a heartier texture, and a mixture of chicken and vegetable broth. Also used blue tortilla chips with sesame seeds. Wow - this was healthy and fantastic! It's even better the 2nd day. - 8/1/07
