Introduction

I am always struggling to get my kids to eat their vegetables, so I was sneaky by adding cauliflower to my potato stuffing in these potato skins. I am always struggling to get my kids to eat their vegetables, so I was sneaky by adding cauliflower to my potato stuffing in these potato skins.

Ingredients

    4 med. baking potatoes
1 cup frozen cauliflower with sauce (cheese cubes in the bag)
    1/2 cup skim milk, warmed
1/4 cup reduced fat sour cream
    2 Tbsp. unsalted butter
    1 tsp. salt

Directions

I microwaved potatoes until they were fork tender, then I scooped out the pulp of the potatoes and sprayed skins with cooking spray and put in oven at 375 for 10 minutes to get them crisp. In the meantime, I microwaved the cauliflower and pureed it in the food processor. I added butter, milk and sour cream to potato pulp and blended using a mixer, added cauliflower and then salt. I scooped filling into the potato skins and sprinkled with paprika (optional). I had so much filling left that i baked the remaining in a dish along side the potatoes.
