Introduction

breakfast caserole improved to be healthier and contains no cholesterol and no added salt breakfast caserole improved to be healthier and contains no cholesterol and no added salt
Number of Servings: 12

Ingredients

    1 carton egg beaters
    1 bag veggie cheese
    1 cup grits
    1 cup morningstar meal starter
    1 handful spinach leaves
    1/2 cup onions
    1/4 cup green peppers
    1 tsp oregano
    1/2 tsp garlic powder
    1/2 tsp onion powder

Directions

cook grits.
add meal starter, chopped onion and green peppers,
add 1/2 cheese and spices
pour in carton of egg beaters
mix well.
put spinach on top, then chop it in with a spatula
when spinach is completely mixed in, top with remaining cheese
bake at 350 for approximately 25 minutes or until casserole in firm. Makes 12 large servings.
top with salsa and soy sour cream or hot sauce.
