Ingredients

    3 boneless, skinless chicken breasts, cooked and shredded or cubed
    2 cups low fat cheddar cheese (can you colby jack or mexican blend as well), shredded
    1 small can diced green chilies, optional
    1.5 cups salsa
    8 low fat, low carb tortilla's
    1 10 oz. can campbells 98% fat free cream of chicken soup
    1 10 oz. can campbells 98% fat free cream of mushroom soup

Directions

***NOTE: this recipe makes a 9x 13 inch casserole and the nutritional calculation is based on 6 servings. this can easily serve 8 and would reduce the calorie count to 263 colries if serving 8.

cook (boil) 3 boneless, skinless chicken breasts. cool and then shred with fork or cube into bite sized pieces.
while chicken is cooking, combine both cans of soup, can of green chilies, and salsa into blender and blend together. Cut tortillas into bite size pieces (i use a pizza cutter and cut them into small squares--or you can just tear them into pieces).
in a large bowl, combine shredded or cuben chicken, salsa/soup mixture, tortilla shells and 1/2 the cheese. mix this together and place into 9x13 in. casserole dish. top with remaining cheese and bake in 350 degree oven uncovered for 45-60 mins.
