This salad truly substitutes for potatoe salad. If you didn't know it was made of cauliflower you would probaly first think it was a traditional potatoe salad. Ingredients

1 med head of cauliflower
6 hard boiled eggs peeled and chopped chunky
2 large celery stalks diced
2 green onions or 1/4 cup snipped or chopped
1/2 cup light mayonaise
1/4 cup pickle relish
1/2 tsp each of salt and pepper (or season to taste)
1 tsp of paprika
Directions
Cut cauliflower into flowerets (about 10 cups). In large saucepan cover cauliflower with water and bring to boil over medium high heat. Boil until tender crisp (about 6 minutes) . Drain and rinse under cold water. Put in large bowl and using a knife cut flowerets into bite size pieces. Add chopped eggs, celery, green onions. Add the mayonaise, relish, salt and pepper and stir gently. Sprinkle with paprika and refrigerate for several hours or overnight.
