Introduction

This is a great alternative to meatloaf, and is easy to prepare. I've used Whole Wheat seasoned breadcrumbs in this recipe, even though the nutritional database did not have data for it, so you're getting more fiber and protein that you thought.

Ingredients

    2 lbs ground turkey
    1 cup part-skim ricotta cheese
    3 eggs
    2 cups tomato sauce
    1.5 cups whole wheat seasoned breadcrumbs
    1 cup grated carrots
    1 cup grated onion
    6 tbls grated Locatelli romano, grated

Directions

Pre-heat oven to 350 degrees.
Mix all ingredients except grated Locatelli and 1 cup of the tomato sauce; form into loaf in baking pan.
Top with 1 cup tomato sauce and grated cheese.
Bake for 2 hours.
Slice into 16 servings.
