Introduction

I learned this recipe while living in Italy. It is so divine, you will stop going out for alfredo dishes to cook for everyone you know. It's even low enough in calories to fit into a meal without blowing it. I could not find an alfredo recipe that I could successfully make for 5 tries. Even this is recipe that I couldn't mess up. Sometimes I wish I never got to turn out right. Ha

This recipe makes 1 serving.. multiply as you need. It's so easy to make, you'll be finished faster than a trip to Fazoli's would take.

Ingredients

    2 tbsp. I Can't Believe It's Not Butter, Light Spread
    1 tsp. flour (*this is the secret to make it work*)
    1/2 cup Skim milk
    1/2 cup Romano cheese, freshly grated
    1/4 cup Parmesan cheese, freshly grated
    1 garlic clove, freshly grated

Directions

1. Grate garlic clove and cheeses in a small bowl

2. Melt margarine in a small saucepan on low heat.

3. When it starts to bubble, add 1 teaspoon of flour, stir constantly with a wisk until blended. It will start to turn more white and thicker than a yellow liquid.

4. Now add the 1/2 cup of skim milk, 1/4 cup at a time, stirring constantly until the mixture starts to bubble.

5. Next, add the 1/4 cup Parmesan and 1/2 cup Romano grated cheese mixture slowly. Stirring constantly, always on low heat. It's ok to remove the pan from heat when you might think it may burn, just stir consistently.

6. Lastly, add the garlic, a dash of black pepper and salt and stir occasionally the sauce simmers until desired thickness, about 5 minutes.

Enjoy over 1 serving of whole-wheat pasta, gnocchi, ravioli, or tortellini! Buon Appetito!
