Ingredients

    1 15-oz can black beans, rinsed
    1 15-0z can diced tomatoes (plain or with green chiles)
    1 small onion, chopped
    1 clove garlic, minced
    2 Tbsp fresh cilantro chopped
    1 Tbsp olive oil
    chili powder, cumin, salt, and pepper to taste

Directions

Saute onions in olive oil in a large pan. When translucent, add garlic for a minute. Add black beans and tomatoes an season with chili powder, cumin, salt, and pepper to taste. Cook until juice from tomatoes evaporates. Remove from heat and let cool for a minute. Stir in fresh cilantro.

Makes 4 servings.
