Ingredients

    3 egg whites
    1/4 c spinach (frozen)
    1 tbsp onion (diced)
    1 tbsp feta cheese

Directions

Spray small fry pan with cooking spray.

Add egg whites to pan. Let cook until egg starts to turn white. Add spinach and onion. Slowly turn until fully cooked, then sprinkle with feta cheese.

Great with salsa.

    Incredible!
    I sauteed chopped red onion before adding the egg whites, used a handful of fresh spinach, then put it all in an ezekiel tortilla. SO GOOD AND FILLING! - 6/14/13
