Number of Servings: 4

Ingredients

    Package of seaweed sheets- 8 sheets
    Package of Mori-Nu extra firm silken tofu- 12 oz
    1 cucumber cut into strips
    1/2 box of Neufchatel Cheese- 4 oz (or low fat cream cheese)
    1/4 cup alfalfa strips
    1 garlic clove, minced
    2 cups cooked brown rice
    1 tbsp olive oil

Directions

Heat oil in pan with garlic. Add tofu cut into small slices. Fry until heated through and slightly crispy. Mix together with rice.

spread about 1 oz of cheese on seaweed sheet. Add a little less than 1/4 cup of rice mixture and spread it over as much of the sheet as possible. Place cucumber and sprouts on top of the rice. Roll the sheet into a cone shape.

Makes 4 servings (2 rolls = 1 serving).
