Ingredients

Italian Sausage, pork, 3 link, 4/lb
    Onions, raw, .25 cup, chopped
    Canned Tomatoes, 454 grams
    Oregano, ground, 1 tsp
Kraft Mozzarella Finely shredded Part Skim cheese, 1 cup
    Parmesan Cheese, grated, .5 cup
    Egg, fresh, 3 large
    Butter, unsalted, 2 tbsp
    Parsley, 2 tbsp
    Garlic powder, .5 tsp
    Fettucini noodle, 8 oz

Directions

Remove sausage casing if you want. Brown meat in an oven-proof skillet; drain. Add onion, cook until tender. Stir in tomatoes and oregano; bring to boil. Simmer 20 minutes, stirring occasionally. Stir in mozzarella cheese. Sprinkle 1/4 cup Parmesan cheese over mixture.

Combine remaining 1/4 cup Parmesan, eggs, butter, parsley and garlic powder. Toss noodles with egg mixture and spread over meat mixture in skillet. Bake at 350 degrees for 20 minutes. To serve invert skillet on platter, sprinkle with additional Parmesan cheese if desired. Cut into wedges.

Mike's recipe serves 6. I serve 8 with it, and add a salad. This rounds out the meal. It's healthier. It's yummies.

Enjoy.
