Ingredients

    Baby Leaf Lettuces Tossed Salad, 1.5 cup
    Strawberries, fresh, 4 small, sliced
    Grapes, 6, seedless, cut in half
    Mandarine Oranges, .25 cup, sections
    Blackberries, fresh, 8 small
    Feta Cheese, .25 cup, crumbled
    Ken's Steak House, Lite Raspberry Walnut Vinaigrette Salad Dressing, 2 Tbsp, 1 serving

Directions

1 Serving; used as a meal is delicious and satisfying!

Pile on the salad greens, add sliced strawberries, cut grapes, mandarine orange sections, blackberrie. Crumble the Feta cheese over the top. Drizzle Lite Raspeberry Walnut Vinaingrette over top and ENJOY!!!

I came up with this recipe after visiting the Longhorn Steakhouse in my area. It was sooo delishious I had to have it EVERY DAY!! So I set out to recreate it. This is my version. I dropped out the candied pecans they put on their's... and the dressign they use has yogurt in it... It is... YUM! But less expensive than their's is.

PS

Feta has a LOT of salt in it, you can easily substitute a healthier cheese - I stayed with Feta because I want it to be a treat for me... Feta has a strong flavour that only I enjoy in my household.

As someone noted, red onion - yes. Longhorn does put thinly sliced red onion in their salad... but.. I cannot eat raw onions - it bothers me too much... so I omitted that as well... LOL

Update:
4 of my kids like Feta now. GRR! So I have honed this recipe down, to make it healthier for the kids. They all love the salad, so, I have changed Feta over to either cubed cheese or crumbled cheese... sometimes I use strips of american cheese, 1 slice for each person's salad, that I have cut into strips... Or sometimes I use 1 TBSP finely shredded cheese per person. The kids that like this recipe are: 4, 7, 14, 16 ... My almost 18 year old don't like salad. Her boyfriend loves this salad too though!!

    It has a lot of fruit which is ok if you aren't diabetic. I cut 2 of the fruits and delete the cheese altogether. It doesn't lose too much of the flavor that way. Adding chopped apple and the mandarin orange to be wonderful and the apple adds the crunch factor back in when deleting the nuts. - 5/13/09

    This was lovely. I've tried it twice now. I did add back in the toasted pecans, (not candied) and the second time, I added fresh spinach and strips of grilled chicken and whisked some Greek yogurt into the vinaigrette...more calories, but good...thanks! - 5/11/09

    This was very tasty and didn't even need any dressing! I added walnut pieces to the salad. It was a big hit at a backyard BBQ, even the men loved it! - 6/16/09
