Introduction

Great, basic recipe if I'm just cooking for myself. I use lower sodium tomatoes. Add in any herbs you like! You can definitely build upon this recipe. Ingredients

    1 Boneless, skinless chicken breast
    1/2 cup canned diced tomatoes, lower sodium
    1/4 cup chopped onion
    1 clove garlic, chopped
    2 fresh basil leaves, chopped
    1 TBLS olive oil

Directions

Cook chicken until done. Dice into pieces and set aside. In small skillet, heat olive oil. Add diced onion, garlic, and freshly ground black pepper. Saute until onions are fully cooked. Add tomatoes, diced chicken and basil. Simmer until it thickens a bit. Great with a small salad, or over a small serving of pasta.

    My husband is out of town a lot and I have been looking for recipe just for me. And let me tell you I have found it!This is easy, quick and taste excellent. I topped mine with a little Parmesan and it it awesome. Thanks! - 5/11/10
