Ingredients

    2 boneless, skinless chicken breasts
    1 tbsp chili powder
    2 tbsp olive oil
    2 tsp thyme
    2 tsp sage
    1/2 c parmesan cheese
    8 oz uncooked whole wheat angel hair noodles (224 grams)
    2 quarts orange juice from concentrate

Directions

Makes 2 servings

Peirce chicken breasts several times with a fork and season with chili powder, thyme, sage, and parmesan cheese. Place in a sealable bowl and cover with orange juice. Cover bowl with lid and allow to marinade in the refigerator for 24 hours. Heat olive oil in a large non-stick skillet. Place chicken breasts in the pan (without orange juice) and cook on each side for about 10 mins or until chicken is white in the middle. After chicken is finished, add orange juice to skillet and allow it to come to a boil. Reduce down to about half of the original amount and then simmer for about 20 minutes, or until slightly thickened. In the meantime, cook pasta according to the directions on the package. Slice chicken breasts into 2 inch strips. Serve chicken breasts slices on top of pasta and cover with orange sauce.
