Ingredients

    2 frozen pie shells (9 inch. Buy the shallow shells, not the deep dish variety)
    1 pound mushrooms, sliced
    1 large onion, chopped
    1/2stick of butter
    3/4 cup egg substitute
    1 1/2 cups fat free half and half
    1/2 cup Parmesan cheese
    Salt and pepper to taste

Directions

Bake frozen pie shells at 400 for about 10 minutes or until lightly golden. Saute mushrooms and onion in butter until onions are tender. Divide mixture evenly between the 2 pie shells. Beat together eggs and cream for 2 minutes at medium speed. Add Parmesan cheese, salt and pepper and mix well. Divide mixture evenly between the 2 pie shells. Bake in a 350 degree oven for 40 to 45 minutes or until custard is set and top is golden. Each pie serves 4
