Introduction

I though this together one night for dinner. I just used what I had and what looked good. Super easy and quick. You can do it even faster if you make the Bacon in the microwave but I saute the mushrooms a in the same pan after the bacon is done. I find by doing this the dish doesn't need any extra salt added. If you make bacon in the microwave use maybe 1/2 to 1 Tbsp EVOO instead, but that will alter calories a little. You can use a full serving of spinach if you want which is 3 oz but to me there isn't enough egg for that. Again that will change the calories. I though this together one night for dinner. Ingredients



    1/2 cup Better 'n' Eggs egg substitute
    2 slices Great Value Turkey Bacon
    3 oz sliced Baby Bella Mushrooms
    1.5 oz Spinach, fresh
    2 Tortillas, MISSION, flour tortilla, 8 inch

Directions

1. Cook bacon according to package and set aside.

2.Using same pan saute mushrooms till soft ,while mushrooms cook crumble the bacon.

3. Add eggs and bacon let set up just a little then add spinach.

4. Stir and scramble mixture till spinach is wilted. Serve on warm tortillas.

Makes 2 servings of 1 tortilla each.
