Ingredients

2 tbsp. canola oil
4 celery stalks, sliced diagonally
1 onion, sliced
8 oz. chicken breast (skinless and boneless)
1 green pepper, sliced
1 1/2 cup fresh bean sprouts or 1 (14oz) can bean sprouts, drained and rinsed
3/4 cup low sodium chicken broth
1 tbsp. flour
2 tbsp. low sodium soy sauce
2 large green onions, sliced diagonally
Black pepper to taste
Directions
Cut chicken into small, thin strips.
In a wok or large frypan heat the oil over high heat. Add celery and onion and cook stirring often for about 2 minutes.
Add chicken and green pepper and continue cooking and stirring for about 5 minutes, or until meat is cooked through. Add bean sprouts and cook 1 minute.
Mix broth, flour and soy sauce together and add to pan. Add green onion and pepper and cook for a few minutes until thickened. May serve over rice.
