Ingredients

Lettuce Wraps
Peanuit Oil (1Tbsp)
Garlic (3 cloves)
Ginger (1")
Carrots (.75 c)
Scallions (1)
Cabbage (.5 c)
Lime Juice (1 Tbsp)
Rice wine (1 Tbsp)
Sugar (1 Tbsp)
Soy Sauce (1 Tbsp)
Chicken (2 c)
Anchovy paste (1 tsp)
Lettuce Wraps
Peanuts (.5 c)
Directions
Heat peanut oil in skillet over medium heat. Add garlic and ginger and cook for 1 minute. Add carrots. Cook for 3 minutes.
Combine chicken, lime juice, rice wine, soy sauce, and anchovy paste in bowl.
Combine remaining ingredients in a bowl and toss.
If eating immediately, combine carrots/ginger/garlic, veggies, and chicken mixture into bowl and toss. Serve chicken mixture and veggies in a lettuce leaf and top with crushed peanuts.
To Serve later- store the veggies and chicken separately. They will maintain their crisp texture this way.
Serve lettuce wraps with either brown rice or rice noodles.
