    5 cups diced potatoes
    3/4 cup chicken broth
    1 tbsp butter
    1 cup sour cream
    2 cups chopped scallions
    salt and pepper to taste


Boil potatoes in salted water for 10 minutes or until soft. Drain well. Mash potatoes with butter and add chicken broth just until they come together, anywhere from 1/2-3/4 cup. Stir in sour cream and green onions. Makes 10 servings
