Ingredients

    1 tsp olive oil
    1 1/4 cup liquid egg substitute
    1 cup boiled broccoli
    1/2 cup steamed mushroom pieces
    1 cup chopped boiled asparagus
    2 tsp minced garlic
    2 tbsp chopped chives
    1 tsp chopped oregano leaves
    1 tbsp fresh chopped basil
    1/8 tsp fresh-ground black pepper
    4 tbsp grated Parmesan cheese

Directions

1. Preheat oven to 375 degrees F.
2. Coat an ovenproof pie plate or skillet with oil. In a large bowl, combine the remaining ingredients except the Parmesan cheese. Add to skillet.
3. Set the skillet in the oven and bake the frittata for 14-18 minutes until set.
4. Remove from oven and loosen edges with a spatula. Sprinkle with grated Parmesan cheese, cut into wedges.
