Ingredients

    1 medium onion, chopped
    2 cloves garlic, minced
    1 1/4 pound ground turkey
    1 tsp ground oregano
    1/4 tsp black pepper
    1 container (15oz) low-fat ricotta
    1 cup Italian-blend shredded cheese
    1 pkg (10oz) Tinkyada brown rice lasagna noodles, broken in half
    1 pkg (16oz) frozen broccoli, thawed and squeezed dry
    1 jar (26oz) chunky pasta sauce
    1/2 cup water

Directions

In a large nonstick skillet, cook onion and garlic over medium-high heat, stirring often, for 4 minutes or until softened. Add turkey to skillet and cook until no longer pink. Drain fat. Stir oregano and pepper into turkey.

In a small bowl, combine ricotta and ½ cup of the cheese.

In slow cooker bowl, layer half the uncooked noodles. Spread half of the meat mixture and half of the broccoli over the noodles, then top with half of the sauce and ¼ cup water. Gently spread ricotta mixture on top, and continue layering with remaining noodles, meat, broccoli, sauce and an additional ¼ cup water.

Cover and cook for 4 hours on high or 5 hours on low. Sprinkle remaining ½ cup cheese on top for last 15 minutes of cooking time.

Makes 8 servings (about 1 3/4 cup each).

    Just a heads up - the website has the incorrect nurtition info entered (it's all zeros) for the Tinkyada noodles and it wouldn't let me change it. You'll need to add 90 cal and 24g carbs to what the nutrition analysis says!
