Ingredients

    1/4 cup sliced onion
    1/2 pound potatoes, quartered (about 3 large)
    1/2 pound baby carrots
    1 1/2 cups water
    1 1/2 teaspoons minced garlic
    1 bay leaf
    1 tablespoon sugar
    1 tablespoon cider vinegar
    1/2 teaspoon pepper
    1 1/2 pounds corned beef brisket
    1/2 pound cabbage (about 1/2 small head)

Directions

1. Place the onion, potatoes, and carrots in a 3 1/2 quart slow cooker.
2. Mix water, garlic, bay leaf, sugar, vinegar, pepper, and contents of corned beef spice packet. Pour over vegetables.
3. Top with brisket and cabbage.
4. Cover and cook on low for 8-9 hours or until meat and vegetables are tender.
5. Discard bay leaf before serving.
6. Serve with a slotted spoon to allow liquid to drain.
