Ingredients

    8 oz beef (filet or other very lean beef), cut into 1/2 inch pieces
    1 can each black beans and corn, drained and rinsed
    2 cans kidney beans, drained and rinsed
    2 tsp olive oil
    2 cloves garlic, minced
    1/4 red onion, diced
    1/2 cup tomato paste
    1 can light beer, like Miller light
    2 cans water
    1 chipotle pepper, chopped

Directions

Saute garlic and onions. Add beef and brown. Add tomato paste and chipotle pepper. Stir and saute. Add can of beer. As it simmers, add beans and corn, then add water. Bring to boil, then drop to a simmer and continue cooking.

Makes 8 1-cup servings.
