Ingredients

    2 Tablespoons vegetable oil
    1 medium onion, chopped
    4 ounce can green chillies, drained
    3/4 cup rice, uncooked
    1 cup water
    1 beef bouillon cube
    16 oz. can red kidney beans
    2 oz. shredded Monterey Jack cheese
    1 pound smoked sausage
    1 teaspoon Tabaso sauce or Cholula Hot Sauce (Cholula has less vinegar

Directions

In medium saucepan, heat oil over medium-high heat. Add onion and chillies and saute for three minutes. Add rice and water and simmer covered for ten minutes or until rice is tender. Stir in beans, cheese, sausage and Tabasco.
