Introduction

This is based on a very old southern recipe I remember as child. My Grandmother would make them with left over black eye peas. I made a few changes and tried to make them healthier. Number of Servings: 6

Ingredients

    1 can of red kidney beans rinsed, drained well and pureed
    1/4 Cup red onion chopped
    1 Clove Garlic
    1 Large Egg beaten
    1/4 Cup flour
    1 tbsp Miracle whip light salad dressing
    1 cap full of Mrs. Dash
    Non stick canola cooking spray

Directions

Mix the beans, onions, garlic, egg , miracle whip and Mrs. Dash together. Lightly stir in the flour. It may take a little more or less to make the mixture bind together. You can't form these into patties.

Heat a non stick skillet sprayed with canola spay and drop the mixture by rounded tablespoonfuls into the skillet. Don't worry about how they look just let them brown on the first side. Allow to cook about 3 mins and flip. Once flipped press out flat with a spatula and cook about 3 mins on that side. Remove from heat and continue with the rest of the batter.

Yields at least 6- cakes

They are wonderful with any kind of bean and can serve as a whole meal.
