Introduction

Ingredients

    1 C amaranth
    2 C water
    2 apples, diced
    2 C frozen blueberries
    1 banana
    6 dried apricots
    1/4 C pecans, chopped
    6 tsp raw unhulled sesame seeds

Directions

Toast amaranth in cooking pot until it begins to make a popping sound. Add water and bring to a boil. Cover, and simmer for 20 minutes.

Meanwhile, chop, dice, and thaw all fruit and nut add-ins.

At the 20 minute mark, add all the fruits. Stir, cover, and simmer for another 5-10 minutes.

When amaranth is cooked through (will be quite gummy), add the nuts and remove from heat.

Sprinkle 1 tsp of sesame seeds on each portion before serving.

    Incredible!
    I really didn't like the earthy taste of amaranth when I tried this recipe as it is. But the second time I added a few drops of good vanilla essence and 2x4cm sticks of cinnamon whilst cooking the amaranth and used a ripe but firm banana just at the end.superb!!Millietara - 11/13/12
