Number of Servings: 4


    Salsa: 1 t. olive oil
    1 t. red onion, chopped
    1 T. minced fresh chives
    1/2 T. red wine
    1 T. balsamic vinegar
    salt and pepper to taste
    1 c. fresh halved strawberries

    for Chicken" 1 lb boneless, skinless breasts
    juice of 1 lemon
    2 garlic cloves, minced
    1 1/2 T fresh herb - I like basil, tarragon is also recommended
    salt and pepper to taste


For Salsa: in small skillet, warm 1 tsp. olive oil and saute red onion until wilted. Add chives, red wine, vinegar, salt and pepper to taste and simmer 2 minutes. Add strawberries and cook for another 3 minutes (Strawberries should hold their shape).

For Chicken: Combine lemon juice, crushed garlic, 1 T. olive oil and some minced up herbs - I like basil - with a little salt and pepper. Pound chicken breasts a bit, then marinate. Grill til done, about 4 to 5 minutes and serve with salsa.
