Ingredients

    1 1/4 C water
    1 Cup uncooked bulgur
    1 cucumber peeled, seeds removed, sliced
    2 roma tomatos sliced
    1/2 c of scallions (green onions) chopped
    1 1/2 C Garbanzo beans (chickpeas) rinsed
    2 tsp olive oil
    3 TBSP lemon juice
    Salt, pepper, garlic salt, parsely, chili powder, and mint to taste.

Directions

Bring water to a boil. Add bulgur, remove from heat, cover and let stand until water is absorbed (25-30 min).

Mix the veggies and garbanzo beans together. When bulgur is cooked add to mixture. Season with lemon juice, olive oil and spices. Chill and serve!
