Ingredients

    Olive Oil, 2 tsp
    Onions, .5 cup, finely chopped
    bell peppers (green), 0.5 cup, diced
    16oz can diced Tomatoes, undrained
    15 oz can Soybeans
    15 oz can Golden Hominy
    2 tsps taco seasoning
    .5 tsp ground cumin
    .5 tsp ground oregano
    1 cup Water, tap
    4oz can diced green chilies

Directions

Heat oil in large saucepan and saute onion and bell peppers until tender (about 4 minutes). Add all the remaining ingredients except diced chilies. Bring to a rapid boil. Reduce heat and simmer 10 minutes. Remove from heat and stir in green chilies. Add more hot water if you prefer a thinner soup. Serves 6. (Recipe from back of Westbrae Organic Soybeans can).
