Introduction
A throwback recipe of country/homestyle green beans, just like my grandma used to make. Definitely not "low fat", but can be a low carb treat. Ingredients
-
2.75 lbs fresh snap green beans
1 lb red/new potatoes (small)
1 lb bacon
1 can chicken broth
.75 stick butter
Approx 5 cups water
1 tsp garlic
1 tsp+ salt (to taste)
1 tsp+ fresh ground black pepper (to taste)
Directions
Cut off ends of green beans and snap in half. Rinse and drain both green beans and potatoes. You can cut potatoes in half if they are larger but if they are the bite sized kind, you can leave them whole.
Place green beans and potatoes in large soup/stock pot. Add 1 can chicken broth (you can subsititute water or add less water and use more chicken broth) and cover beans and potatoes with water. Turn heat on high until boiling.
While water is getting hot, slice up the 3/4 stick of butter and add to the pot. Add 1 tsp garlic and salt and pepper. Chop RAW bacon into approximately 1 in square pieces and add to pot. Heat to boiling and let boil about 10 minutes. Cover and turn heat to low, cooking about 2.5-3 hours. I like my beans soft, some people like them crunchy and if that is your style, you can lessen the cooking time.
Serve as side dish or take a larger serving as a main dish (we did this a lot growing up and it was quite filling).
Makes about 24 side-dish servings but the serving sizes vary and that is an estimate.
