Ingredients

*Cooking spray - just enough to coat the saute pan
*Chives - 1 TBSP chopped
*Spinach, fresh - 1/2 cup
*Egg mixture - 1 egg & 1 egg white mixed together
*1 Whole Wheat English Muffin
*Pepper Jack Cheese - 1 slice
*Tomato - 1 slice, 1/2" thick
*Turkey bacon, cooked - 2 pieces
*Salt & Pepper - to taste
Directions
1. Spray hot saute pan with cooking spray
2. Sweat aromatics (chives)
3. Add spinach and cook through until wilted down. Season with a pinch of salt
4. Add egg mixture (egg and egg white mixed together) and season with salt (if more is needed) and pepper
5. Stir egg and veggie mixture and cook until just starting to cook through (but moisture is still present)
6. Flip "omelette" and cook the other side for only a minute or so
7. Remove omelette from pan and reserve.
8. While making omelette, place cheese slice on one side of the english muffin and toast until cheese is melted and muffin is tasty
9. When everything is cooked, fold "omelette" to fit muffin and place over the cheese.
10. Add tomato slice, cooked turkey bacon and close the sammich with the other half of the english muffin. Voila!
