Ingredients



    * Chicken Breast, no skin, 4 breast, bone and skin removed (remove)
    * Broccoli, frozen, 1 package (10 oz) (remove)
    * **Rice-a-Roni -Chicken Flavor, 32 oz (remove)
    * Mayonnaise, regular (mayo), 1 cup (remove)
    * Cream of Chicken Soup, 1 can (10.75 oz) (remove)
    * Saltine Crackers (Saltines), 1 cup, crushed (remove)
    * Margarine butter blend, 60% corn oil margarine and 40% butter, 0.5 stick (remove)

Directions

Boil chicken in water until done, then remove and cut into bite size pieces (or tear into small strips). RESERVE the stock.

Make Rice-A-Roni per box directions, using chicken stock in place of water.

In separate bowl, combine soup and mayo, adding salt or pepper to taste (I typically don't add those, but I do add about 2 TBS curry powder as I LOVE curry with chicken).

In a large plastic baggie, mix the melted butter and crushed saltines, squooshing until it's all mixed together evenly.

Start layering in casserole dish. First put down chicken (all), then all of broccoli, then top with all of the soup mix. Finally, put on the top layer of saltines. Bake in a 425 degree oven for about 30 minutes or until as hot as you like.

**Some recipes call for cheese. You can add shredded cheese (typically sharp cheddar) to taste to the soup mix. OR you can sprinkle it on top of the soup layer then top the casserole with the cracker mix. I leave it out - I think the casserole is fine without it (and I LOVE me some cheese) and I don't need that extra fat (doesn't it have enough already?). Every little bit helps, so no cheese for me.
