Introduction

Number of Servings: 4

Ingredients

    * *Edamame, Shelled, Frozen, 1 cup
    * Bacon, 1.5 medium slices, cooked
    * Yellow Sweet Corn, Frozen, 1 cup kernels
    * *Peppers, sweet, red, fresh, 1 cup, chopped fine
    * Onions, raw, 1 small, chopped fine

Directions

Use nonstick spray in a nonstick pan and saute onions and peppers until soft. Combine frozen corn and shelled edamame in a microwave safe bowl and microwave for 1 minute just to get the ice off (you can also rinse in warm water for a minute--drain well). Add crumbled crispy bacon (you can use bacon bits too), corn, and edamame to the pan and cook until warmed through. Season with salt and pepper to taste. Great as a colorful and healthy side with any kind of fish or chicken, you can also use the leftovers cold in a southwestern salad.
