Ingredients

    1 medium zucchini
    1 medium summer squash
    2/3 cup onion
    1 small tomato
    3/4 tsp curry powder
    1 Tbsp unpacked brown sugar
    1/2 cube chicken bouillon cube
    olive oil cooking spray

Directions

Cut zucchini and summer squash into to 2" matchsticks (medium size). Dice onion. Seed tomato and dice.

Spray nonstick saute pan with cooking spray. Saute zucchini, summer squash and onions until crisp/tender. Add seasonings and tomato and heat through. Serve.

OPTIONAL: If desired, top with 1 tsp shredded Parmesan cheese per serving.
