Ingredients

    2 cans black beans, drained and rinsed
    2 cans diced tomatoes with green chiles, drained
    2 cans corn, frozen, or canned, if canned drained
    1 small onion, diced
    1 small green red, or yellow pepper, diced
    1 clove garlic, diced or minced
    salt and pepper to taste
    1 Tbsp cumin
    5-6 sprigs of cilantro, chopped fine

Directions

mix all ingredients together. can use as dip with chips, or as topping to tacos or fajitas...instead of guacamole and sour cream. May serve warm or cold.
