Ingredients

3 Large Chicken Breasts (approximately 1.5lbs total)
5 tablespoons bread crumbs
2 tablespoons whole wheat flour
2 eggs, egg whites only
Cooking Spray
1/4-1/2 cup marinara sauce
3 ounces mozzarella
Directions
Preheat oven to 350º.
Trim chicken and tenderize. Lightly coat chicken with whole wheat flour.
Mix egg whites with a little milk. Coat chicken with egg mixture and then coat with bread crumbs.
Place chicken in hot pan coated with cooking spray (heat medium-high) to brown both sides. Once browned, place in 9x13 pan coated with cooking spray.
Place in oven for about 15 minutes depending on thickness of the chicken. Once cooked through, add sauce and 1 oz of mozzarella to each chicken breast. Place back in the oven for about 5 minutes or until cheese is melted.
Note that these are very large chicken servings. This recipe can be changed from 3 servings to six for nutritional needs.
