Ingredients

Smoked sausage, 1 sausage, diced 1/4"
Onions, 1 medium, chopped
Green Peppers (bell peppers), 1 cup, chopped
Red Bell Pepper, 1 cup, chopped
Yellow Bell Peppers, 1 cup, chopped
Garlic, 3 tsp
Olive Oil, 2 1tsp
Mushrooms, fresh, 2 cup, pieces or slices
Sun dried Tomatoes, 1 cup, chopped or sliced
*Pepper, ancho, dried, 2 pepper, chopped
*Potato, 16 oz frozen hash browns
Directions
This is a pretty easy recipe where most of the stuff can be cooked in a skillet.
1) If using dried ancho peppers then start them soaking in very warm water first. (This will help them to soften up for chopping.)
2) Bake hash browns till crispy gold.
3) While hash browns are baking sautee' Onions, Peppers, Garlic and olive oil in very hot skillet.
4) After Onions and Peppers have softened up a bit then add Mushrooms, Sun dried Tomatos and Sun dried peppers.
5) Let flavors blend together for about 5 minutes then add Sausage and Hash browns.
6) Let flavors blend stirring every couple of minutes.
7) Serve hot just after sausage is cooked (slightly curled).
This is a hearty breakfast that can easily serve about 6 to eight people.
This can be served with salsa and tortillas and cheese.
Garnish lightly with Parsley flakes ad Paprika.
