Introduction

Simple, easy rice pudding. If want to use dairy, use 2% milk and double the sugar. Made this for my niece who is allergic to dairy. She is 3 and she loved the recipe. Simple, easy rice pudding. Ingredients

    2 1/2 cups cooked rice (leftover rice is great)
    1 cup water
    2 cups vary vanilla soymilk (SILK brand)
    2 Tablespoons sugar
    1 teaspoon pure vanilla extract

Directions

Break rice up into individual pieces (squish out hte clumps). Mix with all other ingredients in heavy metal pan. Cook on medium-low, stirring very frequently to prevent burning. Done when the rice is starting to breakdown and the mixture has thickened to taste. May need to add more water or silk, depending on how dry your cooked rice is.

Makes about 10 1/2-cup servings.
