Introduction
My husbands absolute favorite! I'm not sure how healthy it is, but I use light mayo to make myself feel better about eating it. It's great over brown rice, but the rice takes just as long to cook as the chicken so start it before you begin preparing the dish. My husbands absolute favorite! Ingredients

I can artichoke hearts (drained and chopped)
3/4 cup parmesan cheese (shredded)
3/4 cup mayonnaise
1/2 tbspn garlic salt
4 chicken breasts
Directions
1. Preheat oven to 375
2. Mix together artichoke hearts, parmesan cheese, mayonnaise and garlic salt in a medium bowl.
3. Place chicken in baking dish, top with mixture and bake uncovered for 40 minutes.
4. Serve over brown rice. Yummy!
