Introduction

Ingredients

    6 oz boneless /skinlessChicken breast, sliced into strips
    2 Tb Kikkoman Lite Soy Sauce
    3/4 -1 tsp minced Ginger Root (depending on how much you like ginger)
    1/2 C. Pineapple and orange juice drink,
    3/4 tsp Orange Peel,
    1 clove minced Garlic,
    2 Tb Olive Oil, 2 tbsp
    2 TB Cornstarch
    1/4 C. chopped green and/ or red bell peppers
    1/8 C. Duck Sauce (Or use 1/8 c. apricot jam mixed with dash of ginger root, 1 each tsp vinegar & soy sauce)

Directions

# FOR MARINADE: In a zipper style bag, combine the orange pineapple juice, soy sauce, ginger, garlic and orange peel. Mix well.
Add the chicken pieces to the marinade and refrigerate overnight, or for at least 8 hours.
45 minutes before serving: (I like to make this in 2 -3 batches and freeze the chicken in the marinade ahead of time, so I have 2-3 meals prepared in advance)
Preheat oven to 350 degrees. Take the chicken from the marinade, and set marinade aside: DON'T throw away). Spray a non-stick skillet with cooking spray and heat the oil.
Brown the chicken over medium high heat. Transfer to a 9x13 inch baking dish.
Mix remaining marinade with cornstarch THOROUGHLY (I put it in my blender) and pour over chicken. Add the pineapple , pepper and oranges (Leave a couple of pieces of each out for garnish) Cover and bake in the preheated oven for 30 minutes. Remove cover and bake for 10 minutes more. Put remaining pieces of orange and pineapple on top to garnish
You can serve this with brown rice or Ramen noodles. A delicious and easy treat!
