Vegetarian Sloppy Joe's Vegetarian Sloppy Joe's
Number of Servings: 10

Ingredients

    1 package Soy Crumbles (refridgerated kind, not frozen)
    1 cup Onion, chopped
    2 Carrots, chopped
    0.5 cup Red Pepper, chopped
    2 cups frozen Spinach, thawed
    3 cloves of Garlic, chopped
    1 small can of Tomato Paste
    2T Ketchup
    2T BBQ Sauce
    2T Balsalmic Vinegar

    optional: Italian Seasoning, Salt, Pepper, Chili Flakes, Hot Sauce

Directions

Combine all ingrediants in a slow cooker with half a cup of water and let simmer for at least 4 hours. Serve with your favorite bun or wrapped in a tortilla!

Makes 10, one quarter cup servings

    Didn't like all the extra stuff in here. I eat a sloppy joe once every few years. When I do, I think I'll just stick with manwich and add the MorningStar Farms crumbles. - 5/28/18

    Great idea did not use soy but some chopped meat. Also used home made ketchup, BBQ sauce & tomato paste - 11/20/19
