Number of Servings: 4

Ingredients

    1 T minced garlic
    3 strips of bacon
    1 med red onion
    3 c white beans (northern, pinto, or butter beans)
    4 c raw spinach
    juice of 1 lemon
    1 T of butter
    salt and pepper to taste

Directions

Cut bacon into bite size pieces and cook til crisp in a large saute pan. when bacon is crisp turn heat to med low and add chooped onion and garlic. cook til opaque and tender.

While onions are cooking, in a separate non stick pan, melt butter over med hi heat (if you add a tiny bit of olive oil your butter will not burn). Pat scallops dry with a paper towel and salt and pepper both sides. Add to melted butter and cook 2-3 minutes on each side. Do not stir so they develop a nice crust.

When the onions are opaque add beans and spinach, and salt and pepper to taste. Stir and cook until beans are hot and spinach is wilted, but still bright green.

Spoon 1/4 of the bean mixture onto a plate or bowl, top with 1/4 of the scallops, and squeeze a little fresh lemon over each serving. Serves 4.
